The white truffle season: dates, dogs and a paper wrapper

By Porter Lang

If you plan a trip around the white truffle, the first practical question is the calendar, and the sources do not give one answer. That is a good reason to read them side by side before booking anything.

This is a planning note, not a buying guide. We name no prices, no sellers and no hunters.

What the fungus is

Wikipedia lists the white truffle as Tuber magnatum, known in Italian as tartufo bianco d’Alba. It says the species grows mainly in the Langhe and Monferrato areas of Piedmont, especially around Alba and Asti, and also in Marche (Acqualagna), Molise, Abruzzo and the hills near San Miniato in Tuscany. It lists sites outside Italy too, among them Istria in Croatia, the Swiss cantons of Ticino and Geneva, south-eastern France and Hungary.

The same article says oaks are the most common host trees, poplars the second most common, followed by willows. A truffle can reach 12 cm across and 500 g, though it is usually much smaller. The article lists three record finds: 1.31 kg near Buje, Croatia, in November 1999; 1.5 kg near Pisa in December 2007; and 1.89 kg in Umbria in December 2014.

The season: three answers

  • A travel-planning blog, Italy Planner: early October to late December in the Langhe hills, peaking in November. It calls October the month of larger quantities with slightly less mature flavour, and November “the sweet spot”.
  • Michelin Guide’s wine feature: September through December.
  • Wikipedia: the fungus fruits in autumn and its fruitbodies form in winter, with the market in Alba busiest in October and November.

These are not necessarily in conflict. A season can open in September, peak in November and close in December. But they are three different framings, and none comes from a regulator.

Why a season is not a promise

Michelin’s feature reports that in 2022 the scorching summer heat hardened the soil, and the truffles found were small with a less nuanced aroma. Wikipedia lists conditions that limit where the species grows: fruitbodies need at least 0.4 °C while forming in winter, it is less drought-tolerant than two other truffle species, and flooding can interfere with the fungus’s partnership with tree roots. Our reading: a published calendar tells you when to arrive, not what you will find.

How the hunt works

Italy Planner defines a trifolao as the Piedmontese word for a truffle hunter, working with a dog, and describes a typical visit as a half-day outing with a hunter and dog, followed by a tasting and a meal. Michelin’s feature adds that dogs have to be trained not to eat their finds, and that one young dog ate a truffle during the hunt the writer watched. It also says hunters dig around tree roots with a geologist’s hammer. Neither source covers licensing, so we say nothing about it.

The fair

A Hong Kong newspaper’s lifestyle feature on the International Alba White Truffle Fair says it is held in the Cortile della Maddalena, “a historic courtyard in the heart of the old town of Alba”, and that in the year it covers it ran every weekend from 6 October to 25 November. It says visitors can buy white truffles directly from hunters and local companies, alongside black truffles, cheese and hazelnuts. The article gives no start year and no daily hours.

Italy Planner says the fair is held every weekend in October and November in the same courtyard, with hundreds of hunters and dealers selling to buyers and chefs. It adds a view of its own: buying directly from hunters is more transparent than buying from dealers in town. That is the blog’s opinion, and we cannot test it.

Keeping a fresh truffle

Italy Planner gives the only storage advice we found. Use a fresh white truffle within 5 to 7 days of purchase. Wrap it in paper, not plastic, and change the paper daily. Refrigerate it, ideally alongside eggs or rice, which absorb the aroma. It describes the aroma as “intensely pungent, garlicky, complex”. Michelin’s feature does not cover storage, and neither does Wikipedia. One promotional blog is thin ground for a food-handling rule, so treat this as a blogger’s habit, not guidance from a food-safety body.

Dates in order

  • November 1999: a 1.31 kg truffle found near Buje, according to Wikipedia.
  • December 2007: a 1.5 kg truffle found near Pisa, according to Wikipedia.
  • December 2014: a 1.89 kg truffle found in Umbria, according to Wikipedia.
  • 2022: a hot summer hardens the soil and the finds are small, according to Michelin’s feature.

Side by side

Italy Planner says black truffle (Tuber melanosporum) season runs from November to March. The Michelin feature and Wikipedia concentrate on the white. If you read a menu or a stall sign that mixes the two, the calendars overlap in November and December.

What kind of sources these are

Wikipedia is an open encyclopaedia. Michelin’s piece is a magazine feature from a restaurant-guide publisher. The Hong Kong newspaper piece is a lifestyle feature about one edition of the fair. Italy Planner is a promotional travel blog that sells experiences; its tips are the weakest evidence here.

Questions a buyer would ask

Can it be farmed? Our sources do not say. Wikipedia lists limits on where the species grows but reports no cultivation figures.

Is a bigger truffle a better one? No source we read compares size with flavour. Italy Planner says October brings larger quantities with slightly less mature flavour, which is about quantity and ripeness, not size.

What we left out

We left out prices, the names of hunters, restaurant names, licensing rules and any claim about how to judge firmness, because no source gave one. We left out wine and any tasting-menu detail.
